Been a busy week between holiday shows and lots of night shifts. I found myself looking for something fresh that wouldn’t weigh me down but it had to be fast, so I threw together this yummy deconstructed spring roll salad

Spring roll salad

Ingredients

-4 oz salmon marinaded in soy sauce 15 minutes ( could use different protein like chicken if it’s not your flavor) per person

-10 oz round mix lettuce

-1 cup shredded purple cabbage

-1 cup shredded carrots

– 1 chopped red bell pepper

– 1/2 pint slice cherry tomatoes

-4 slice scallions

-1/2 cup sliced mint

-1/2 cup chopped cilantro

-1/2 cup chopped fresh basil

-1 package vermicelli rice noodles cooked and chilled

-sweet Thai chili sauce

Instructions

Take chopped ingredients and toss together in salad bowel. Served Thai dressing on side.

The crunch and freshness really helped lighten up the heavy meals the holidays have brought.
