This winter has got everyone in my house sick, sometimes all you need is something nourishing and simple to help nourish your body until you’re feeling better. 🤒

This simple soup will have you feeling better in no time!


Ingredients
-1 onion
-1 shallots
-3 celery stalks chopped
-3 carrots chopped
-6 scallions chopped
-4 cloves minced garlic
-2tbsp olive oil
-2 quarts chicken stock
-2 bay leaves
-1 tbsp dried parsley
-1 tbsp dried basil
-4 cups water

Instructions
Warm oil in pot. Sautéed onions, celery, carrots, garlic, shallots and scallions until onions are clear. Add stock and water with dried herbs. Bring to a boil. Once boiling decrease temperature to a simmer and allow to simmer for 30 minutes. Then serve.

This recipe is flavorful but gentle on the stomach. Feel better!❤️‍🩹

Easy Stuffed Zuccini

It’s summer and I know people are looking what to do with all those zucchini’s popping up in the garden! Here’s a delicious carefree recipe that has served our family well during the week and kept up with our garden supply.

Such a health, easy way to stay with your diet goals and indulge in something delicious!

Ingredients

  • 3-4 medium zucchini
    -1 pound ground chicken
    -3 teaspoons minced garlic
    -1 red bell pepper, diced
  • 4 ounces mushrooms, diced
    -1 cup marinara sauce – I used a garlic and basil marinara
    -1 teaspoon dried herb Italian seasoning
    -1 cup shredded part skim mozzarella cheese
    -1/2cup freshly chopped basil
    -1 tablespoon olive oil

Instructions
-Preheat oven to 400 degrees. Cut zucchini in half lengthwise. Use a tablespoon to scoop out seedy center and discard. Arrange side by side, cut side up, on a baking sheet or in a casserole dish.
-cover zucchini with light dressing of olive oil and salt and pepper. Bake for 15 minutes

-in a large skillet over medium-high heat, brown chicken for 4 to 5, using a spatula to break into small pieces as it cooks.
-Add bell peppers, onions and mushrooms and saute 2-4 minutes until tender.

  • stir in in garlic, marinara sauce, and Italian seasoning.
    Spoon mixture into the zucchini boats and cover with fresh mozzarella.
    -Bake for 20 minutes or until cheese begins to bubble
    Serve immediately

Ingredients
Garlic Oil

1/4 cup olive oil

1 large garlic clove, very thinly sliced

Directions

Heat olive oil in a small saucepan over medium-high. Add the garlic slices and cook until sizzling, 30 to 40 seconds. As soon as you see any sign of browning, remove from heat immediately, as the garlic will continue to cook and turn completely golden in the hot oil.

Cranberry Sourdough Scones

Rainy/ snowy days when everyone is at work or at school have me craving some warm baked treats with an afternoon tea.

I found myself staring at Edgar Allen Dough ( the pet name for my sour dough starter) and decided to scratch that itch.

This recipe put a big smile on my face and gave me a happy post shift snack for the next few days. Enjoy!

Recipe

DRY INGREDIENTS

▢ 2 cups all purpose flour, 280 grams
▢ 1/2 cup granulated sugar, 100 grams
▢ 1 tablespoon baking powder
▢ 1/2 teaspoons salt, 2.5 grams
▢ 1 stick unsalted butter, frozen, 113 grams
▢ 1 cup mix cranberries
WET INGREDIENTS

▢ 1/2 cup sourdough starter discard, 142 grams
▢ 1 large egg
▢ 1 teaspoon vanilla extract, 5 grams
▢ 3 tablespoons heavy cream, 45 grams (milk can be substituted)

Instructions
In a large bowl, combine flour, sugar, baking powder and salt.

Grate frozen butter into the dry ingredients with a cheese grater and cut in with a pastry cutter. (You can also use your hands or a food processor).

Add in the mix-ins and coat with flour. Set the bowl aside.

In a separate bowl, combine the wet ingredients.
Fold the wet ingredients into the flour mixture. Be careful not to overwork the dough.

On a clean, lightly floured surface, roll the dough out into a circle about 8” in diameter. Cut the circle into 6 equal parts.

Place on a prepared baking sheet lined with parchment paper about 2” apart.

Put in the fridge for 30 minutes up to 3 days for a longer fermentation. They will not ferment much at 30 minutes, but after 3 days the grains should be nicely fermented.

When ready to bake, preheat the oven to 400°.
Brush the top of the scones with cream and sprinkle with sugar. Bake for 25 minutes and serve with butter,honey or jam!

Best Bruschetta

Ever watch something on tv that you just feel like you need to eat or you’ll feel empty for the rest of your life? That’s how I felt with just about everything they eat in the movie “Julie and Julia.” It’s likely I’ll be posting a lot of inspiration from that movie, but for now… a snack I’ll be making again and again.

Bruschettas

Ingredients

2 tablespoons extra virgin olive oil

Loaf of Italian bread sliced

1/2 pint cherry tomatoes quartered

Handful basil

2 cloves garlic

Shredded Parmesan

Salt and pepper

The prettiest ingredients!

Instructions

In a bowel salt and pepper cherry tomatoes and cover in olive oil. Chop basil and mix into tomatoes marinade. Place to the side.

Warm two tablespoons of olive oil oil in a pan. Fry bread on both sides. Once at desired crispiness. Place on paper towel and rub outside with halved garlic clove.

Drain tomato mixture and add to fried bread and enjoy!!!

Special Sunday sauce

Sauce for Christmas gifts

I don’t often get a Sunday off where things slow down and I get to relax… but I stumbled upon such a golden day and took advantage my making a large batch of spaghetti sauce that I was able to can for the future. The good thing about this recipe is that it can easily be thrown together and put in a slow cooker if you’re not around to watch it. Over the stove.

Ingredients (remember to measure with your heart)

2 large (28oz cans tomato puree)
2 cans diced tomatoes
1 can tomato paste
1 green pepper
1 onion
Baby Bella mushrooms8 oz (can add more or less depending on taste)
Garlic – as much as you like
Fresh basil – a good handful
Dried oregano
Splash red wine maybe 1/4 cup
I use Italian turkey sausage- either hot or sweet- you can leave out if you don’t want meat or can use pork sausage. If you can’t find ground just remove from casing and cook.

Brown sausage first then just throw it all in and cook on low for about 6hrs.

Can leave in stove or throw in crock pot

I like to blend it after its cooked with the immersion blender but you can keep it chunky if you prefer

The smell is amazing!

Homemade Christmas Baileys

It’s that’s time of year that we celebrate by overindulging in food and gifts. When it comes to family gifts for my siblings I have made a true effort to create homemade consumable gifts so that their houses aren’t overwhelmed with junk they no longer need. In my care packages I made everyone a small bottles of Irish Cream, lemon cello, orange cello and beef jerky!

Ingredients
2 cups Irish whiskey
1 14 oz can condensed milk
1/3 cup chocolate syrups
2 tablespoons instant espresso
1 table spoon vanilla extract

1/3 tablespoon cinnamon

Add together and mix in blender or I used my handheld blender
